1. Marinate tofu
Tofu by itself is quite flavor-neutral, but when marinated, it can host all of the most delicious flavors ever. Soy sauce, miso, garlic, herbs, and spices - all are perfect matches for tofu.
To marinate, press the tofu first (more on that below), cut into the desired shape, and let it marinate for at least 30 minutes or even leave it overnight in the fridge – the longer the better.

2. Press tofu
Pressing tofu will help to remove the water from it and allow the marinade to be absorbed even more. Not to mention it makes tofu firmer, making it easier to fry and to get crispy.
Wrap tofu in a clean kitchen towel and place a heavy object (e.g. a frying pan) on top for 20 to 30 minutes. Even if the recipe doesn’t mention it, always press tofu before using it. It will hold its shape better, and make your life easier.

3. Freezing tofu for new textures
Freezing tofu means new textures: porous and spongy. After you thaw it, you’ll have a firmer, chewier tofu, making it a great stir-fry or meat substitute match.
Freeze tofu overnight in the freezer, then thaw it at room temperature, and squeeze out any excess water. You now have a crumblier tofu perfect for vegan "pulled pork" or tofu crumbles.

4. Grate & air-fry Tofu
Grating and air-frying tofu will change the tofu game for you. It becomes as crispy as chips and the perfect topping for many dishes.
Grate tofu with a grater or crumble by hand into small pieces. Toss with some olive oil and seasoning, then cook in an air fryer basket at 190°C / 380°F for approximately 15 to 20 minutes. Toss it all halfway through and enjoy your new favorite topping.
5. Shred & Fry Tofu
Shredded tofu is forever juicy when fried, whilst also browning well and getting a great depth of flavor.
Fry on medium heat until golden brown and slightly crispy, and season to taste in the pan.

6. Slice & fry tofu
Thin slices or strips of tofu offer a delicate interior texture and a crispy exterior, which is especially great for salads and wraps!
Cut extra-firm tofu into very thin strips or use a vegetable peeler to slice it. Fry in a hot pan with a bit of oil until the edges are crispy and golden.
7. Vacuum-seal tofu
How about this for a shortcut? Vacuum-sealing tofu speeds up the absorption of the marinade pulls the liquid deep into the tofu's pores for an even more intense taste.
